Vineyard & winemaking

  • Vignoble & vinification Blend: 70% Grenache Noir and 30% Syrah
  • Area: 4 hectares at the foot of the southern slope of the Uchaux Massif
  • Average age of the vines: 35 years
  • Soil: plot on a hillside with a sandy clayey soil structure derived from upper Cretaceous calcareous siliceous sandstone.
  • Methods and winemaking: The grapes are hand-harvested. Grenache and Syrah are harvested separately at full phenolic ripeness. Destemming and crushing are followed by transferring to concrete vats maintained at 22°C, then 25-27°C. Indigenous yeast is inoculated, and total maceration lasts approximately 20-24 days with daily punch-downs and four weekly rackings during fermentation. Daily lees stirring is carried out during the subsequent maceration phase. The wine is then racked, pneumatically pressed, and racked twice within the following three days. Malolactic fermentation takes place, followed by racking and blending. The wine is aged in concrete vats for 14-16 months, then lightly filtered and bottled.

Tasting

DégustationA strong Grenache Noir blend, combined with Syrah, gives this cuvée a beautiful, intense garnet color with brilliant highlights. The nose is rich, with lovely notes of fresh red fruit and Morello cherry, mingled with spicy notes of clove, as well as hints of garrigue and thyme. The palate is full-bodied, with smooth, rounded tannins that support a fleshy and rich mid-palate; the finish is persistent, with notes of sweet spice and red fruit.

It will accompany a vegetable tian with spices, a rib of beef, a leg of lamb with herbs, a lentil stew with rosemary, roasted game.
