- Grape variety: 100% Rolle/Vermentino
- Area: 1 hectare at the foot of the southern slope of the Uchaux Massif
- Average age of the vines: 20 years
- Soil: clay-limestone, light alluvial soils
- Methods and winemaking: Mechanical harvesting at night to prevent oxidation and alteration of aromas. Destemming, crushing, then gentle pneumatic pressing, protected from air. The juice is kept at 12°C in stainless steel tanks for 24 hours to settle. A starter culture is added for fermentation with indigenous yeasts at 16-18°C in stainless steel tanks, then racking. Secondary fermentation takes place in a closed tank, with only 4g of residual sugar retained to maintain good acidity. Sterile filtration and bottling in February 2024.
