Vineyard & winemaking

  • Vignoble & vinification Blend: 80% Rolle and 20% Sauvignon
  • Area: 1.5 hectares at the foot of the southern slope of the Uchaux Massif
  • Average age of the vines: 20 years
  • Soil: clay-limestone, light alluvial soils
  • Methods and winemaking: The grapes were harvested on fruit days and in the cool of the morning. The Rolle was brought to advanced ripeness, almost overripe. Great care was taken in the vineyard: thinning and leaf removal were achieved. Destemming, crushing, and gentle pneumatic pressing followed. Settling and fermentation took place in oak barrels that had held 7 or 8 wines for 12 to 14 days. The wine was then aged in oak barrels on its lees with bâtonnage (lees stirring) for 6 months. Bottling occurred in April.

Tasting

DégustationThe nose is beautifully intense, rich, floral, and mineral, with aromas of pastry, poached pear, candied citrus, linden blossom, acacia, fresh almond, and honey. The palate is ample and long, offering a lovely richness balanced by a fresh and taut attack that provides structure and volume. The finish is equally refreshing, with great persistence, still lingering on floral and white fruit notes.

Serving & Pairing

Service et accords

Enjoy it on its own as an aperitif or with tapas. It can also accompany shellfish dishes, bouillabaisse, mussels, grilled prawns, fish or poultry curry, eggplant Provençal, Italian pasta… It’s a perfect match for tomato coulis.
