Vineyard & winemaking
Blend: Caladoc, Merlot- Area: 3 hectares at the foot of the southern slope of the Uchaux Massif
- Average age of the vines: 20 years
- Soil: clay-limestone, light alluvial soils
- Methods and winemaking: Mechanical harvesting at night to prevent oxidation and alteration of aromas. Destemming, crushing, then gentle pneumatic pressing in an airtight environment. The juice is kept at 12°C in stainless steel tanks for 36 hours before settling. Fermentation lasts approximately 12 days at 16-18°C in stainless steel tanks, followed by racking. Sterile filtration and bottling take place around February.
